Vinification:
 
Grapes are carefully sorted on the selection table and destemmed for 24 hours of skin-contact maceration.
 
The tank is refrigerated in order to avoid the spontaneous fermentation. Throughout the maceration grapes are gently stirred inside the tank using hydraulic paddles which homogenize the mixture. In this process, phenolic compounds, which give the wine its fruity character, are extracted from the skin.
 
Then, macerated grapes are sent to a pneumatic press. It is left to settle, without being moved, for 24 hours and then fermented in order to preserve the variety and aroma characteristics, fresh and fruity.

Ageing is completed in the bottle. The bottles are stored horizontally in our underground bottle-cellars for at least 8 months before their labelling and release for sale.
 
 
It is a humble wine able to pair with any meal.
