Daphne Leong started in the food & beverage industry in coffee and wine retail, and moved to various roles in operations, management, and procurement in various established brand names. Being in the industry, she understands the in-and-outs, and various needs of its professionals. She is currently pursuing her Level 4 Diploma in Wines & Spirits with WSET®.


How to Taste Blind by Tan Ying Hsien, MW

Speaker Profile

Tan Ying Hsien qualified as the first and only Singaporean Master of Wine (MW) in 2015. He won the Institute of Masters of Wine Champagne Trinity Scholarship 2010 and was nominated to attend the Master Napa Programme in September 2013. He also won a French Wine Society scholarship for the Sud de France Master Level Programme in 2013 and the 2013 AXA Millésime Scholarship for MW students.

Categories and Grades of Sake - Wine & Spirit Education Trust (WSET)

Sake is divided into numerous categories and grades. Being able to know, understand and identify the various classifications is key to making sound choices during your purchases. This masterclass will cover these various tiers, how they are made and what to expect when evaluating them.

Sean Au is a WSQ certified trainer & experienced sommelier. He served the highly acclaimed Singapore Airlines as an Air Sommelier and Trainer for 11 years before clipping his wings. His portfolio also includes wines & spirits consultation for F&B establishments and training for sommelier-ship.


Master of Wines Class

Speakers Profile

Annette Scarfe MW was awarded the prestigious Master of Wine (MW) title in 2012, and is an active member of the Education and Events committees of the Institute of Masters of Wine. Annette consults for international companies on the business of wine, and is also a Wine Buyer and restaurant Consultant. She is a WSET and Bordeaux educator and runs courses in Asia and is a regular member of tasting panels for consumer magazines and judges extensively at wine competitions across 3 continents. Annette has lived in Singapore for over 20 years.

Olivier Chapman was appointed Programme and Development Manager at the Institute of Masters of Wine in 2015 – a new role for the Institute. He is responsible for the delivery of the Study Programme and Master of Wine Examination worldwide. He is also responsible for building the Membership of the Institute by attracting high calibre potential Members and supporting them through the process of becoming Masters of Wine.


Make Bordeaux Great Again - WSET style

From Right Bank to Left Bank, from red wine to sweet, this masterclass will explore the variety of wines produced in Bordeaux. You will learn how the climate and winemaking choices produce these styles of wine. Using the WSET® systematic approach to tasting you will also learn how to write a professional tasting note.

Jackie Ang is a holder of the Wine and Spirits Education Trust Advanced Certificate and a French Wine Scholar (with the highest honours). He is also a current WSET® Diploma student and is deeply passionate about wine and wine education.

Dr Huijuan Wu graduated from the University of Oxford with a doctorate in environmental science. Her passions for wine stem from extensive wine tastings at Oxford, where she found wine an exquisite and civilized hobby. She holds a WSET®level 3 with distinction, and is close to complete her WSET®diploma.
